Welcome to the Cake Decorators Q&A
My cake sinks into each other
Hello, I made a 4 tier wedding cake( sponge cake, red velvet, coconut flavoured cake and chocolate cake for the last tier), (15Inch, 12 inch, 10 inch, and 8 inche). Then I discovered after covering with fondant and stacking all together with a wooden rod. All began to sink into one another. And slightly falling apart. Please, what could have gone wrong?… Then, when I separated back the tiers , I noticed the wood I used I stacking we’re pushing up from there position.. Pls what could be wrong too? Thanks

Hello Bammy
Did you watch Paul’s tutorials on how to stack cakes? He shows how to do it properly to prevent cake collapse. There are five lessons here:
http://www.cakeflix.com/free-cake-decorating-courses/stacking-cakes-overview
As you will see Paul uses nine dowels for each tier. This gives maximum support for each tier, so even if a dowel slips and goes sideways there are plenty of others to support the structure.
How soon did you dowel the cakes after baking? Some cakes need to be settled before dowelling. If they are dowelled on the same day as baking the cakes can sink slightly and expose some of the dowels. Dowels which are not sitting level with the surface of the cake cause unstability. Sometimes it is also necessary to allow filled cakes to settle and even out. This helps any space caused by air bubbles in the filling to settle down before icing and dowelling.
To make sure the cakes have settled, cover each cake with cling wrap and place a weight on top like a medium size book and leave for a few hours or overnight. Use a bubble level to make sure all the tiers are even. Make any adjustments after the settling then ice and dowel the cakes as shown by Paul.
Hope this helps.
