Nut Free Marzipan
Hi all, I need to decorate a cake for someone with a nut allergy so would be grateful for any “fake” marzipan recipes, or would you just double layer with icing?

There is a recipe on the Dr Oetker website for a nut free alternative. It has almond flavouring instead of essence – make sure you use flavouring and not essence to ensure it is totally nut free. As a marzipan lover, I’m grateful I don’t suffer from a nut allergy, but as an icing lover too, would be happy with extra thick icing! You could use a thin layer of golden coloured icing to create the look of marzipan and whatever colour icing on top to suit the cake if you prefer.

You could also crumb coat with ganache which would give you a lovely flat even base to lay your fondant on.
Thank you so much. I think I’ll try the Dr Oetker recipe and as they don’t even like the almond smell or flavour, I’ll use vanilla instead.
