Oil based cake
Does anyone have a tried and tested oil based sponge or Madeira cake recipe they fancy sharing? I’m after one like Paul’s chocolate one. ta

If you are happy to use a mix then you won’t do better than Wright’s cake mixes which are oil based. The madeira is exceptionally good, it can be bought in larger Sainsbury supermarkets, Aldi, Lidle and Morrison’s. Lidle have a promotion on it at the moment. As for a scratch recipe, you’d have to get the oil proportions right otherwise the cake will be greasy. I keep experimenting but haven’t quite got the texture right so can not post the recipe here until it is perfect, tried and tested. Try the Wright’s, it’s lovely and not quite as heavy as an all butter madeira.
Thanks but I’m after a scratch recipe. I’ve tried converting a couple but haven’t found one that I like yet.

Thanks for advice on Wrights mix. After today’s chocolate cake disaster I might just bake one of these tomorrow!

I’m going to give a wrights mix a try at the weekend, was thinking that it might be good to have on hand in an emergency (like last week, when I had a power cut, a sunken cake, and no more eggs… at 1.00am, naturally). Is it just oil and water you add to these mixes?
Just oil and water, if you like you can add extra flavourings but it really doesn’t need it. After it’s baked leave it to cool completely and you can, if you want, add a flavoured simple syrup drench (with a pastry brush). I don’t have a knack with mixes, but this is great and as you say, a good standby in an emergency. £1.39 at the moment on promotion at Lidle.
Well i have searched every shop today & the only place i can find wrights Maderia mix is in sainsbury’s everywhere else has only got the chocolate fudge,Giner & sticky toffee cake so everyone must have been out & brought all the supplies.
