Paul’s Basque Cake!
Hi, Paul uses chocolate cake for his basque cake. Could I use a vanilla sponge recipe? Would it sculpt ok?

I think you’d be better off using something a little studier like this http://www.bbcgoodfood.com/recipes/10860/easy-vanilla-cake. This is not a true Madeira but will stand the weight of the fondant where a Victoria sponge type cake probably would not. A chilled caked will sculpt better, you’ll get less breaking and crumbs. x
