Is it possible to use milk chocolate instead of dark and also omit the instant coffee, or perhaps use less than 9 teaspoons from this receipe? It is for a childs’ birthday cake so require something which is not too rich in flavour. Many thanks.

Yes, milk chocolate can be used instead of dark but please take a peek for tips here:
You can definitely omit the coffee, although it does help enhance the flavour of the chocolate and the coffee taste is totally undetectable.
