Proportions
I am not experienced with ganache (and haven’t made that many cakes!) , and wanted to try making a train cake for my son’s birthday. I want to do several “loaves” of cake as carriages in a freight train, with cargo containers. Some of them can be chocolate ganache, so first question:
I can’t find the amounts / proportions for the ganache, nor any cake recipes!
How much quantity would I need for 6 loaves of cake (I’ve got at least 40 people maybe 50!)
2nd question:
If I want to do really colourful icing as a GLACE icing (rather than a buttercream) is it possible to make it really thick (and use gel colouring) ? Every time I’ve tried glace it just drips down and doesn’t cover the cake.
Or would you say I should stick to buttercream?
3rd question:
is there a way of colouring white ganache with gel colouring?

It would be really helpful if you could say how big the proportions of the train will be. How big will the engine and the carriages be? If you have 40 – 50 people to feed, what size portions of cake would you like to give them? A cutting cake would be an additonal option if you want to give reasonable portions
