Red Velvet Cake

Have been asked to make a red velvet cake as one of the tiers on a wedding cake.

I have tried a couple of recipes and don’t seem to get it right.

Can anyone suggest a really good recipe please. Thanks

Hi brownm,

I’m not sure what recipes you’ve tried before but I use a Hummingbird Bakery recipe and everyone seems to love it. It’s not really my cup of tea so couldn’t comment personally but my friend has tasted lots of different versions and says this is her favourite,you’ll find it here…

It’s cupcake quantities but there’s a note at the bottom giving directions on changes for making a cake instead. Hope this helps and apologies in advance if it’s one you’ve already tried!

Thanks Kirsty, I haven’t tried this one, so will give it a go tomorrow and see how it turns out. Thanks for the help. wish me luck.

Would you cover a red velvet cake with ganache, if so which? white or dark

Personally I would use eithe white or milk chocolate ganache. Red velvet cake is quite delicate and dark ganache would probably overpower it’s taste. For ganache coverage and filling quantites, take a peek here:

I also have a red velvet cake to make as part of a 3 tier was thinking that due to the delicate bake it would be best as the top tier would like your suggestions

I’m no expert on red velvet, never had much success with it! However, I would have thought that if all the cakes were well dowelled and of a similar weight, red velvet could be used in other positions other than just for top tier.
Some people use Rose Levy Beranbaum’s reverse creaming method, which produces a denser cake. There are several recipes online using this method. I’ve used reverse creaming method and love it.
I understand guest tutor Mrs Jones will be putting on a red velvet cake recipe in the premium tutorial library. If you could hold out for her recipe, she would be able to give a more definitive answer. I’m sorry I can’ t be of more help.

Why does a red velvet cake come out patchy??? I always use stacie stewarts with success but this time there are dark patches in the cake. Do i need to throw it away!!!
