Red Velvet Cupcakes
I recently tried making red velvet cupcakes for the first time and they turned out delicious, but the only problem was how red the cakes were. I used gel food dye even though my recipe said to use liquid. Is using liquid better for best results? And how do you know when you have put the right amount in because my mixture looked very very red, but when they came out of the oven, it dulled a lot, and was more of a browny red.

I can only suggest experimenting with the amount of colour you use. This recipe http://www.redonline.co.uk/food/recipes/hummingbird-bakery-s-red-velvet-cupcakes uses 40mls of colour, I haven’t made this one but I do use a lot of Hummingbird bakery recipes. I think perhaps the Dr Oetker natural gel colours are better. I’ve read on this site that they are good. I’m sure other members will also contribute what they use. x
