Reheating the chocolate Ganache

Hi Paul!
I want to know how can you reheat the ganache if you don’t have a microwave. Do you do it in the oven or on the stove?

Ganache can be very gently reheated over a double boiler. The water in the pan should be on a very low simmer and must not touch the heat proof bowl which is sitting atop the pan. Ensure no water or steam enters the ganache. If it does the ganache will begin to seize and become grainy and unuseable.
Encourage the ganache at the bottom of the bowl to mix through with the cooler top parts. Incorporate all the ganache gently, overmixing will make it grainy and oily. If the ganache does separate look here for problem solving solutions:
