SCALING DOWN QUANTITIES FOR MRS JONES’ VANILLA CUPCAKES

Hi there,
I was going to try Mrs Jones’ vanilla cupcake recipe today, but I want to make half the quantity.
The ingredients can easily be halved… except for the eggs!
The full amount is 5 medium eggs… but how many shall I use for half the quantity to make sure the balance is right and the final result a success?
Help please!

Also could you please tell me what modifications I I should make to ingredients and quantities if I want to vary the flavours e.g. chocolate, lemon etc.

Hello Deane-Mae

To get half an egg first weigh each egg individually so you know roughly that they weigh the same. A medium egg normally weighs approx 52g. Crack one egg, whisk it up and weigh out half to use and discard the left over.
Well at least that’s the way it should be done, I’m never that precise! To make lemon version for half the recipe use half a teaspoon of good lemon extract ( not essence) and lemon zest of half a lemon.
