Semi naked crumb coat
Hi, I’m making a 3 tier semi naked wedding cake which I have to transport 150 miles to a family wedding. I shall have the cakes in separate boxes on the journey. My question is: what would be the best crumb coat to stay firm during the journey so I can set the cake up without too much damage ?
I’d be very grateful for any ideas . Many thanks

Royal icing, icing sugar instead of regular icing sugar, will make a more stable buttercrem. It contains egg white powder which makes the buttercream crust over better. If you’re worried about damage take some of the buttercream with you in an airtight tub so it can be used to do final touch ups if required.
