Hi, I want to make a simnel cake and have looked at Mrs Jones fruit cake recipe, is this suitable or is it too heavy ? Look forward to your advice, thanks.

Most Simnel cake recipes are for light fruit cake which use substantially less fruit than Christmas cakes. Mary Berry has a lovely easy simnel cake recipe here http://www.redonline.co.uk/food/recipes/mary-berrys-simnel-cake The reduced fruit recipes are not suitable for long storage but will keep for a couple of weeks stored in an airtight cake tin.
