It depends what it is going to be used for. It can be made as normal with single cream but will not set hard if the application is for use under sugarpaste. You could increase the amount of chocolate to make it set harder or use less cream to the amount of chocolate you’d normally use. Single cream does not contain as much fat as double cream so the ganache shelf life will be reduced.
