sponge recipie

I am making a birthday cake for a friend and i need a vanilla sponge recipie for a 8x3ich tin and a 6x3inch round tin. im making a two tier cake for the first time and would be very grateful if someone could help me with the ingrediants i need,to know how much of it i need and timeing. thankyou

If you have a recipe which you use regularly you can convert it here http://www.cakeflix.com/blog/how-to-work-out-what-size-cake-tin-to-use. Use either the ready rekoner or the cakeometre, choice is yours and hope they help. For the timing, it will depend on your oven, whether it is fan assisted or not. For fan assisted ovens the given baking temperature should be reduced by 10 -20 degrees. Everyone’s ovens are different but as a norm I bake 8″ cakes for 50-55 minutes on 140c fan assisted and 6″ cakes for 45 -50 minutes on the same temperature. I must point out that in my oven, which is quite fierce, this is the correct temperature for me. Your oven may be completely different, in which case you should either follow given temperatures or your own judgement. I check cakes two thirds the way into baking time as this is the length of time necessary for the centre of the cake to set up. Keep baking until time.
