I have been asked to make ny son’s wedding cake as my polka dot cake I did of Paul’s for my Mum’s 80th really impressed! However it will be 3 tiers and I have to take it to a venue about 60 miles from home and arrive the night before the wedding. I saw on a similar question that it was recommended to take already assembled and to stick flowers etc on when I arrive. My concern is about the ganache and whether I need to put the cake in a fridge once it is stacked. The wedding is in July so we could have a warm spell.

Stacked cakes do not have to refrigerated unless they contain highly perishable fillings eg, cream cheese, custard, mousse or fresh dairy cream. Ganache will remain stable unrefrigerated in a cool room away from direct sunlight and radiators. The sixty mile journey must be pretty daunting, the only thing you can do is turn up the aircon full blast to keep the cakes cool. If you type in the search box ‘transporting cake’ you’ll see a few relevant answers which might help.
There are ways of transporting cake in extremely hot conditons by using dry ice A few videos in youtube which show how it’s done. Search in google or youtube ‘transporting cake with dry ice’. If not handled with adequate care, dry ice can cause serious burns. It is essential to get advice from reputable suppliers who deal within the catering industry.
