How do I avoid sugarpaste icing (on top of either buttercream or ganache) becoming sticky once the cake is cut.

How do I avoid sugarpaste icing (on top of either buttercream or ganache) becoming sticky once the cake is cut.

hi,  once the cake is cut only cover the area of cake exposed to the air, dont cover the fondant or put it in fridge to try and keep it fresh as the fondant will chill and when brought out will begin to sweat and weep and the water content in the fondant will react and it will go sticky, i always store cut cake in its cake box or in an air tight container somewhere away from heat or direct sunlight, ….
