Sticky toffee cake

Hi
I would like to make the teddy bear cake. After watching Paul’s tutorial, he used a sticky toffee sponge which sounds yummy.
Does anyone have the recipe for the sponge he used please?

I’m not sure which recipe to follow though. From what I can see some people struggled with Catharine’s recipe and Mrs Jones tutorial said her cake wasn’t really suitable for stacking or carving. She did say to add 200g of flour to help though? I’m a bit of a novice and unsure what to do lol! Have you tried either of those recipes at all? Sorry for dithering! xx

How about trying the Wright’s toffee mix? That’s what I suggested originally in that thread. I’ve tried it and it is really good. There’s another discussion here for Wrights mixes:

Mrs Jones recommends adding extra flour to most of her cakes if they are needed for stacking. In her video for the toffee cake she says to add an extra 20 per cent, not an extra 200 g. For that recipe you will need to increase the flour by another 34g, that is 20% of 170g.

Please let me know if this helps and also what problems you envisage with Catherine’s recipe. I believe other members have made it and found it to be a good recipe. If you read all the pages in that thread you’ll see that I have answered all the queries which members were struggling with eg type of flour, egg size , baking temperature. Dreamtimecakes also has a recipe in the same thread so you do have some choices. I think since you are trying this as a first time attempt it would be better to stick with Mrs Jones; recipe. She is a professional baker and has a school in her own right. Other recipes under your belt would be good but these should be practiced when you can experiment. How does that sound? If you want to scale Mrs Jones’ recipe you’ll find a ready reckoner or the cakeometre tools here:

Don’t forget to increase the flour by 20%. When scaling up, the flour amount should be 210g and not 170g.
