storing a ganache covered cake

I want to make a plain sponge,filled and covered with milk chocolate ganache. I am not covering it in sugar paste, so can I store it out of the fridge? will the ganache still keep fresh out of the fridge?

Yes the ganached cake can be stored out of the fridge. However since you’re using milk chocolate the shelf life will be shorter if not refrigerated and not under sugarpaste. I would suggest using a longlife cream such as Elmslea. Use it in exactly the same way as you would double cream. If you add a table spoon of alcohol to the ganache that too will help with it;s keeping properties but omit if you wish. To store it, wrap the cake in clingfilm and place it in an airtight cake tin or a cardboard cake box. Place it in a cool place away from direct heat like sunlight and not in the kitchen where heat and humidity can affect it. The ganached cake should remain fresh for approx three days, sometimes longer depending on the making and storing environment.

The ganache cake will be covered in sugarpaste but i am not covering it the same day so shall i wrap in clingfilm and keep in fridge?

The ganached cake can be stored in the fridge. Bring it to room temperature approx half an hour before covering it with fondant. 🙂
