sturdy cake for competition
hi everyone .. i’ve got to do a 3 tier cake for a competition but the wondering if the madeira cake would be any good? do i need to bake it for longer hours for a nice and sturdy sponge?

Madeira cake is certainly good and sturdy. Choose a recipe which uses a combination of self raising and plain flour. The plain flour to account for exactly half again of the self raising amount. This will give you a very sturdy cake. Make a small trial cake to get a good idea of how sturdy it will be. You don’t have to bake for any longer than the recipe’s given time.
