I need to make a tall cake which will take two or three cakes. Will i need to use dowling rods or will the chocolate ganache hold them together and then cover with fondant.

Have a look at any of the tutorials for stacking cakes, the wedding cake section is a good place to start. If you follow Paul’s instructions you will have no problems with your tall cake. Hope this helps.
