Using powdered colours
Hi all,
I’m planning to make Swiss meringue kisses.
It’s the first time that I’m attempting to use powdered colours to colour the meringue mass.
I’ve used small amount of gel colour before, but I realised it is not the correct way, as they contain glycerol.
How do I use the powder? Just add a little bit of powder and fold it into the meringue mixture? Or should I dissolve it in some fluid and then add it?

Powdered colours can be added directly into the foamed eggwhites. Continue mixing to evenly distribute the powder. Sometimes the colour can clump. To prevent this happening, it can be made into a paste first and added to the meringue. Try it both ways and see which suits you best. If you want the meringue to have a marbled effect, fold the colour in gently right at the end without deflating all your hard work.

With what substance do I dissolve the powdered colour and turn it into a paste?
After it turns into a paste, just add it while the mixer is beating the foam?

Apologies for my late, late reply. To completely colour the meringue, beat the egg whites to soft peeks, stop beating. Take a small scoop of the soft peek meringue in a small bowl and mix it well with the coloured powder to make a paste. Return this back to the rest of the meringue and continue beating until the colour is distributed evenly and you have your mixture to the required consistency. If you want to make a marble effect, add the paste once the meringue has reached to stiff peek, fold in the paste slightly to make the marbled effect. Hope this helps.
