very dense chocolate cake
I tried out paul’s moist chocolate cake recipe this week. the finished product was very very dense and rich, felt like little or no air in it. Copied the recipe exactly, any suggestions? Is this the way it normally is?

The recipe calls for the mixture not to be over mixed, it should be like batter for muffins and the end result should be fairly dense like a muffin. If your cake came out ‘tight’ perhaps the batter could have done with a little more mixing but not aerating as with a sponge mix. Silly question I know, but did you remember to use large eggs? Surprising how many people have been getting poor results until they realise they’ve used the wrong size eggs. Just a thought because not enough liquid can also give a very dense cake. However, if it was dense, rich and moist, I think may be you struck gold! Enjoy!!
