Hi I’ve taken on a 3 tiered wedding cake. The bride wants the bottom cake to be fruit, then Madeira then chocolate. Can I get away with not putting dowels in fruit cake, as I will be assembling the cakes at the venue. The fruit cake is very firm

If it’s a matured rich fruit cake than I would say yes because the cake crumb will have had time to stabalise and firm up. I don’t think I would with a freshly baked fruit cake. In the past I’ve stacked fruit cakes atop each other without supports and they’ve been fine. I’ve been lucky enough not to experience any cracking of the sugarpaste.
