Sugar paste is roll out icing used for covering cakes and made from icing sugar, water, glycerine, glucose and gelatine mixed together to form a pliable dough. Flower paste is similarly made but is strengthened with gum tragacanth, a natural edible substance which enables the paste when rolled out to stiffen and hold it’s shape.
