What to use to cover the cake

Hi,
I want to do a cake with sugarpaste coating. Once I’ve baked my cake, what do you use to put on top of the cake so the sugar paste sticks to it well?

Hi Jenna

Will you be ganaching the cake first or covering it with buttercream? Either way once you’ve allowed either crumbcoat to set up in the fridge, the surface of the cake can be made tacky by brushing it with either a little piping gel or boiled and cooled water. Only a small amount is required enough to help the sugarpaste to stick. Make sure the whole surface is tacky to the touch so the paste adheres every where properly. If you put too much on, the paste will become over wet and cause problems with air bubbles, stretching and breaking.
