When is the right time

Hi, I should really know the answer to this! Anyhow, can someone please help me? I always struggle with the decision of whether I cover my cake with fondant, leave it to dry then place on my iced drum, or whether I ice then place onto my iced drum immediately? What is the best way, if there is one

Personally I find an iced cake that has time to dry will transfer with less damage than a freshly iced cake. Although now I usually cover my cake on the un-iced drum, then when the iced cake has dried, I then ice the board around the cake. (Paul has a free tutorial on this website how to do this)

Hello Dawn

To prevent any damage to my cake I always let icing dry and then transfer onto an uniced drum. I use Paul’s up and over method here:

If you want to ice the drum all over allow it to dry for a few days so it’s completly dry. It’s best to do it well ahead.
