When to cover a caked when ganached

Hello. I use milk and white chocolate ganache on my cakes. My question is: is it better to cover in sugarpaste just after putting the ganache on or should you leave it a certain amount of time before covering. There’s lots of information out there so I’m never very sure what to do

Hi clennant

Cover with sugar paste when the ganache has set up. It should be slightly tacky to the touch so that the sugar paste can adhere properply. The amount of time depends on environmental conditions. I always pop milk and white ganache in the fridge because they take longer to set up than dark. Best information to follow is in Paul’s ganache tutorials in the free beginners section here:
