Which White chocolate do you use for the ganache. Not such a good choice for white. Im guessing Nestle milky bar is no good- thanks

Paul uses the Belcolade brand chocolate. However you can use any white chocolate with a cocoa content between 23 – 29% . There are lots of different brands of couverture, I use the Callebut brand. However it is not necessary to use couverture for making ganache.
Nestle milky bar definitely will not be very good. If you want a good bar of chocolate try Linzt or any of the supermarket own brands. If you have a Lidle supermarket near you try their Finn Carre white chocolate. An answer here may also be of help:
