can white chocolate be used for ganache for vanilla sponge cakes

Absolutely kathshaw! Just remember it doesn’t set quite as firm as dark chocolate ganache.

I made the basque cake last week and used white chocolate ganache for filling and covering before icing. Despite the very hot weather the cake held up without any melting or seepage from the ganache. Just remember to use twice or even two and a half times the quantity of chocolate to cream and you should have no problems with it.
