White shard cake,

Hi I would like to make just one tier, of this cake (the bottom one) want to make it in chocolate as birthday cake,

Hi Maxsmum

If I was making the bottom tier (10″) I think I’d use 200 g white choc for the shards, between 200-300g for the flowers and leaves and 400g ganache for filling and covering the cake. If you’re not filling with white ganache then half the amount. The shards (which can be made up ahead of time) and ganache are quick to put together so if you did run short it wouldn’t take long to make up. The amount of modelling chocolate really depends on how many and size of flowers you want to make. I use ganache all the time so usually estimate the amounts, anything left over I freeze and use up for another project. Hope this helps.

Thank you very much, as I’m a newbie, I would also like to know if the shards are made with just chocolate, melted than cooled and then spread on florist wrap,

Yes, the chocolate has been tempered first and spread onto florist wrap.
