Wrinkled ganache
I recently made a ganache drip birthday cake but after about half an hour of applying the ganache it had wrinkled. Could you advise me what I did wrong for future reference please? Many thanks sue

Was it the drips which wrinkled? If it was, perhaps the ganache might have been a little on the thick side causing a crust/skin to form too quickly as it flowed. That’s all I can think that may have caused the wrinkling. Please let me know if this makes any sense. 🙂
Thank you for your reply, it was the top and the drips . I made the ganache fresh and let it cool, it didn’t look thick when I put it on it looked really nice and glossy ,but when it dried it had just wrinkled up
Ok, I can’t really say why that happened since I don’t know which type of chocolate was used. Next time add a little butter, approximately 30g, to the ganache to help it’s fluidity. Don’t worry, it will still set and hopefully not wrinkle.
I used candy melts . I ‘ve never used these to make ganache before so maybe that was why but I ‘ll certainly try adding butter next time . Thank you for your help
