2. Layering the cake

Paul now adds the cake to the branch, layering each level with ganache to ensure that they are solidly stuck together.

3. Covering the tree trunk

In this lesson Paul carves the cake to get the trunk shape that he’s after. He uses rice krispie treats to offer further shape to the branches before covering the cake in sugarpaste, then texturising to get the bark effect.

Olive trunks come in a variety of colours and change with the seasons. Paul had the benefit of having a garden full of olive trees to colour match, but it still took a lot of shades to get the desired colour.
